Marmorguglhupf - Marble Cake

Ingredients

280 g of flour
1 tablespoon of baking powder
140 grams of butter
140 grams of sugar
1 sachet of vanilla sugar
4 eggs
1 shot of cream
1 teaspoon of rum
20 g chocolate powder

What Austrian Marble Cake is

This cake is probably the most classic among all of Austria's cakes. The term "Gugelhupf" refers to cakes of a certain shape typical for Austria, Bohemia, certain parts of Germany and the Alsace. If you don't have the appropriate shape, you might have to use a conventional one and make a Marble Cake rather than a Marble Guglhupf. "Marble" refers to the pattern that the two colours of the dough should make, running into each other like the structure of marble.

How to prepare Marmorguglhupf

Mix butter, sugar, vanilla sugar and yolk until foamy. Add cream and rum. Sieve the flour and the baking powder to homogenise it and mix it with the butter-dough. Whip the egg whites until stiff and carefully mix it with the dough. Divide it into two halves. Mix the chocolate powder with one half . Grease the Guglhupf shape and fill it by alternating the two doughs. Take a fork and poke into the cake to make the layers mingle in some parts - thereby, generating a "marble" effect. Typically, you would fill in the yellow dough first and then a single layer of the brown dough. Bake the Guglhupf at 160 degrees for approximately one hour. Put some icing sugar on top whist cooling.
