Austrian Desserts: Apfelstrudel - Apple Strudel

Ingredients

For the dough:
300 g flour
60 g oil
125 mL warm water
salt
1 egg

For the filling:
100 g breadcrumbs
130 g butter
1.5 kg apples (acidic ones)
150 g icing sugar
cinnamon
raisins

What Apfelstrudel is

Needless to say - Apfelstrudel is among those Austrian dishes that are known world-wide. However, there are several recipes for the dough, some harder to do than others. The one that I give here is not the most elaborate or authentic one, but a quick-and-easy version that I use myself. The nice thing about Austrian supermarkets is that you can buy packs of prepared strudel dough ("Blätterteig") that would be a pain to make properly yourself. I hope the following dough does the job for you.

How to prepare Apfelstrudel

Put all flour on a table and form a little bowl from it. Put oil, egg, salt and water into it and make a smooth dough. Let it sit for about 30 minutes. You can prepare the filling whist the dough is resting for 30 minutes. Peel the apples and cut them into little pieces. If necessary, add some lemon juice to the apple pieces to prevent them from oxidising. Roast the breadcrumbs in butter until lightly golden. Mix them with sugar, apple pieces, raisins and cinnamon.

Spread the dough out thinly like a sheet onto which you can put the filling. Transfer it to a baking sheet first. Make sure to use a lot of flour around the dough to prevent it from sticking to the table and grease the sheet. Close the strudel and put some beaten egg on top of it with a brush (good for the golden colour). Bake the strudel at 180 degrees Celsius in a pre-heated oven for about 30 minutes.
