Austrian Christmas Cookies: Kokosbusserl


6 egg whites
300 g icing sugar with lemon juice
300 g of coconut flakes (grated to very small pieces)

What Kokosbusserl are

Koskosbusserl ("coconut kisses") are a traditional Christmas cookie that gain appeal through their simplicity. Made from few ingredients in little time and yet having a very distinct flavour, they are among the most widely baked cookies in Austria every advent season.

How to prepare Kokosbusserl

Whip the egg whites until very stiff, then gradually add the icing sugar and the lemon juice and finally the coconut flakes. Use a spoon to form small piles on a baking sheet. Bake at 150 degrees for approximately 15 minutes.
