Austrian Snacks: Erdäpfelkäs bread spread

1 kg potatoes
1 onion
250 mL sour cream
250 mL cream
1 bouquet of chives
salt, pepper
What Erdäpfelkas is
Erdäpfelkäs is a bread spread that originates from Upper Austria. Like many meals from North of the Alps, it is based on potatoes and few ingredients. It is easy to make and a wonderful concentration of high-energy food. If you are up for gaining some weight, Erdäpfelkäs is for you! It works best on fresh, dark bread with a glass of buttermilk. It has a plain, but distinct taste and texture.
How to make Erdäpfelkas
Making Erdäpfelkäs does not require a lot of skills. Peel and boil the potatoes, then mash them. Chop the onion and the chives very finely. Mix all ingredients and season with salt and pepper - voila! Put lots of the stuff on your bread, anything below a thickness of two centimetres doesn't count.
